Mexican Cauliflower Rice

Paleo
Yield: 2 servings

Ingredients:

  • 3 cups Cauliflower rice
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 3-4 Garlic Cloves minced
  • 1 Jalapeno, de-seed and chopped
  • 2 medium tomatoes, chopped
  • 3/4 cup bell pepper, diced
  • 1 teaspoon Cumin
  • 1/2 teaspoon Paprika or red chill powder
  • 1 tablespoon Cilantro, chopped
  • Salt
  • cilantro, sliced avocados, Jalapeno, lime juice for topping

Directions:

  1. Sautee onions in oil.
  2. Add garlic and Jalapeno
  3. Add tomatoes, cumin, paprika and salt.
  4. Add bell peppers and cauliflower rice.
  5. Cook 3-4 minutes till tender.
  6. Top with sour cream, cilantro, avocados or tortilla chips.
