Mexican Cauliflower Rice
Paleo
Yield: 2 servings
Ingredients:
3 cups Cauliflower rice
1 tablespoon olive oil
1 small onion finely chopped
3-4 Garlic Cloves minced
1 Jalapeno, de-seed and chopped
2 medium tomatoes, chopped
3/4 cup bell pepper, diced
1 teaspoon Cumin
1/2 teaspoon Paprika or red chill powder
1 tablespoon Cilantro, chopped
Salt
cilantro, sliced avocados, Jalapeno, lime juice for topping
Directions:
Sautee onions in oil.
Add garlic and Jalapeno
Add tomatoes, cumin, paprika and salt.
Add bell peppers and cauliflower rice.
Cook 3-4 minutes till tender.
Top with sour cream, cilantro, avocados or tortilla chips.
