Mexican Cauliflower Rice

Yield: 2 servings
Ingredients:
- 3 cups Cauliflower rice
- 1 tablespoon olive oil
- 1 small onion finely chopped
- 3-4 Garlic Cloves minced
- 1 Jalapeno, de-seed and chopped
- 2 medium tomatoes, chopped
- 3/4 cup bell pepper, diced
- 1 teaspoon Cumin
- 1/2 teaspoon Paprika or red chill powder
- 1 tablespoon Cilantro, chopped
- Salt
- cilantro, sliced avocados, Jalapeno, lime juice for topping
Directions:
- Sautee onions in oil.
- Add garlic and Jalapeno
- Add tomatoes, cumin, paprika and salt.
- Add bell peppers and cauliflower rice.
- Cook 3-4 minutes till tender.
- Top with sour cream, cilantro, avocados or tortilla chips.
